Easy Hibachi Steak and Scallops with Fried Rice

Ingredients
  

  • 2 cups cooked and chilled jasmine rice
  • 250 g steak (sirloin or ribeye), cut into bite-sized cubes
  • 200 g sea scallops
  • 2 tbsp soy sauce
  • 2 tbsp butter
  • 1 tbsp vegetable oil
  • 1 tsp garlic, minced
  • 1/2 tsp black pepper
  • 1 tsp sesame oil
  • 2 eggs, lightly beaten
  • 1/2 cup carrots, finely diced
  • 1/2 cup green peas
  • 2 green onions, sliced
  • 1 cup stir-fried noodles
  • 1 cup mixed vegetables (zucchini, onions, mushrooms, cabbage)
  • salt to taste
  • 1/2 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tsp garlic powder
  • 1 tsp sugar
  • 1 tbsp water
  • 1/2 tsp paprika

Instructions
 

  • In a small bowl, combine the mayonnaise, ketchup, garlic powder, sugar, paprika, and water. Whisk until smooth and creamy, then refrigerate while preparing the rest of the meal.
  • Heat a large skillet over medium-high heat and add the vegetable oil. Season the steak cubes with salt and black pepper, then sear for 3–4 minutes, stirring occasionally until browned and cooked to your preferred doneness. Transfer to a plate.
  • In the same skillet, melt 1 tablespoon butter. Add scallops in a single layer and cook 1–2 minutes per side until golden brown. Remove and place with the steak.
  • Add the remaining butter to the skillet. Stir in the minced garlic and cook for about 30 seconds until fragrant, then add diced carrots and peas and cook for about 2 minutes.
  • Push vegetables to one side of the skillet. Pour the beaten eggs onto the empty side and scramble gently until cooked, then mix with the vegetables.
  • Add the chilled jasmine rice and break up any clumps. Stir-fry for 2–3 minutes until heated through and slightly crisp.
  • Drizzle soy sauce and sesame oil over the rice. Stir well to coat evenly, then add sliced green onions and cook for another minute before removing from heat.
  • In a separate skillet, stir-fry the noodles with mixed vegetables over medium-high heat for 3–4 minutes until heated through and lightly browned.
  • Divide fried rice among plates. Add stir-fried noodles and vegetables alongside, then top with seared steak and scallops. Serve with the creamy dipping sauce.

Notes

Use cold day-old rice for the best fried rice texture. Pat scallops dry before cooking to achieve a proper sear. Cook steak and scallops separately to avoid overcrowding the pan. You can swap scallops with shrimp or chicken if desired, and adjust vegetables based on what you have available.
