Ingredients
  

  • 500 g ground turkey
  • 2 tbsp chopped parsley
  • 2 cloves garlic, minced
  • 0.5 tsp paprika
  • salt and black pepper to taste
  • 1 tbsp olive oil
  • 3 large sweet potatoes, peeled and cubed
  • 2 tbsp milk
  • 1 tbsp butter
  • salt and pepper to taste
  • 2 cups kale, chopped
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • In a bowl, combine ground turkey, parsley, garlic, paprika, salt, and pepper. Mix gently and form into thick patties.
  • Heat olive oil in a skillet over medium heat. Cook patties for 5–6 minutes per side until golden brown and fully cooked through.
  • Boil sweet potatoes in salted water for about 15 minutes until tender. Drain and mash with milk, butter, salt, and pepper until smooth.
  • In a bowl, combine kale, avocado, and cherry tomatoes. Add lemon juice and olive oil, toss well, and season. Massage kale lightly.
  • Plate turkey patties with sweet potato mash and kale salad. Serve warm.

Notes

For a dairy-free version, use plant-based milk and butter alternatives. You can substitute ground turkey with chicken or a plant-based option. Massage the kale before serving to improve texture and flavor. Patties can be prepared ahead and stored for up to 2 days.
