Ingredients
  

  • 3 chicken drumsticks
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp dried thyme
  • salt and pepper to taste
  • 3 large potatoes, cut into wedges
  • 1 tbsp olive oil
  • 0.5 tsp black pepper
  • 0.5 tsp dried oregano
  • pinch of salt
  • 1 cucumber, diced
  • 2 tomatoes, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • olive oil for drizzling (optional)

Instructions
 

  • Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
  • Mix olive oil, paprika, garlic powder, thyme, salt, and pepper. Rub evenly over the chicken drumsticks.
  • Toss potato wedges with olive oil, black pepper, oregano, and salt until evenly coated.
  • Arrange chicken drumsticks and potato wedges on the tray in a single layer.
  • Roast for 35–40 minutes, turning potatoes halfway through, until chicken is golden and potatoes are crispy.
  • Combine cucumber, tomatoes, parsley, and dill. Drizzle with lemon juice and olive oil, then toss gently.
  • Serve the roasted chicken and potato wedges hot with the fresh salad on the side.

Notes

Ensure chicken is evenly coated with seasoning for the best flavor. Do not overcrowd the baking tray to allow potatoes to crisp properly. Turn potatoes halfway through cooking for even browning. Let the chicken rest before serving to keep it juicy. Cut potatoes evenly for consistent cooking. For extra crispiness, soak potatoes before roasting and dry thoroughly.
