Ingredients
  

  • 4 sausage patties
  • 4 eggs
  • 4 strips beef bacon
  • 2 cups potatoes, diced
  • 2 tbsp olive oil
  • 1/2 tsp paprika
  • salt and pepper to taste
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • fresh parsley, chopped (optional)

Instructions
 

  • Heat a skillet over medium heat and cook the sausage patties for 4–5 minutes per side until browned and fully cooked. Set aside.
  • In the same skillet, cook the beef bacon until crispy. Transfer to a paper towel-lined plate.
  • Heat olive oil in a pan, add diced potatoes, and season with salt, pepper, garlic powder, and onion powder. Cook for 12–15 minutes until crispy and tender.
  • Crack eggs into a bowl, add paprika, salt, and pepper, and whisk until smooth.
  • Cook the eggs in a non-stick pan over low to medium heat, stirring gently until soft and fluffy.
  • Arrange sausage, eggs, potatoes, and bacon on a plate.
  • Garnish with chopped parsley if desired and serve immediately.

Notes

For a lighter version, use turkey or chicken sausage and reduce the oil. Avoid overcrowding the pan when cooking potatoes for maximum crispiness. Cook eggs on low heat for a soft texture. You can customize with vegetables like bell peppers or spinach, or add cheese to the eggs for extra richness.
