Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
  • salt and black pepper, to taste
  • 2 tbsp tomato paste
  • 0.5 cup low-sodium beef broth
  • 1 cup cooked rice (white or brown)
  • 1 cup black beans, rinsed and drained
  • 2 cups shredded Mexican blend or cheddar–Monterey Jack cheese
  • 6 large flour tortillas
  • 0.5 cup sour cream
  • 2 tbsp mayonnaise
  • 1–2 tbsp mild hot sauce
  • 1 tbsp lime juice
  • 0.5 tsp smoked paprika

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 3–4 minutes until soft and translucent. Add the ground beef and cook, breaking it apart, until browned and fully cooked.
  • Add chili powder, cumin, garlic powder, paprika, salt, and pepper. Stir well to coat the beef evenly, then add the tomato paste and cook for 1 minute.
  • Pour in the beef broth, reduce heat to low, and simmer for 5–7 minutes until thickened but saucy. Remove from heat.
  • In a small bowl, whisk together sour cream, mayonnaise, hot sauce, lime juice, and smoked paprika. Adjust seasoning to taste.
  • Warm tortillas until pliable. Add cheese, rice, black beans, seasoned beef, and sauce to the center of each tortilla. Top with more cheese.
  • Fold the sides inward and roll tightly to enclose the filling.
  • Toast burritos seam-side down in a skillet over medium heat for 2–3 minutes per side until golden and crispy.

Notes

Warm tortillas before assembling to prevent tearing. Avoid overfilling for easier rolling. Toasting the burritos seam-side down first helps seal them and adds a crispy texture. Let the beef filling cool slightly before assembling to keep tortillas from getting soggy.
