Ingredients
  

  • 2 large chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 0.5 tsp dried oregano
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 500 g potatoes, peeled and cubed
  • 3 tbsp butter
  • 0.33 cup warm milk
  • 1 tbsp fresh parsley, chopped
  • 1 cup arugula
  • 0.5 cup cherry tomatoes, halved
  • 0.5 cucumber, sliced
  • 1 tbsp olive oil (for salad)
  • 1 tsp lemon juice
  • salt and pepper to taste

Instructions
 

  • Peel the potatoes and cut them into evenly sized cubes. Place them in a large pot and cover with salted water. Bring to a boil over medium-high heat and cook for about 15 minutes, or until fork-tender.
  • Drain the cooked potatoes and return them to the pot. Add butter and warm milk while the potatoes are still hot. Mash until smooth or slightly rustic, then season with salt, pepper, and chopped parsley.
  • Pat the chicken breasts dry with paper towels. Rub them with olive oil and evenly season both sides with garlic powder, paprika, oregano, salt, and black pepper.
  • Heat a grill pan or outdoor grill over medium-high heat. Grill the chicken for about 5–6 minutes per side until grill marks form and the internal temperature reaches 165°F (74°C). Let the chicken rest for a few minutes before slicing.
  • In a bowl, combine arugula, cherry tomatoes, and cucumber slices. Drizzle with olive oil and lemon juice, then season lightly with salt and pepper. Toss gently to combine.
  • Slice the grilled chicken into strips. Serve with a generous portion of creamy mashed potatoes and a side of fresh garden salad. Enjoy immediately.

Notes

For extra flavor, add fresh herbs such as thyme or rosemary to the chicken seasoning. Warm the milk before adding it to the potatoes to keep them smooth and creamy. Avoid overmixing the potatoes to prevent a gluey texture. Let the chicken rest for a few minutes after grilling so it stays juicy before slicing.
