Ingredients
  

  • 2 lb boneless, skinless chicken breasts
  • 0.25 cup extra virgin olive oil
  • 0.25 cup fresh lime juice
  • 1 tbsp dried basil
  • 1 tsp ground coriander
  • 0.75 tsp chili powder
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp black pepper
  • 0.25 tsp crushed red pepper flakes
  • 1 tsp salt
  • 4 ripe avocados, diced
  • 2 tbsp fresh cilantro, chopped
  • 3 tsp lime juice
  • 0.5 tsp salt
  • 0.5 tsp garlic powder

Instructions
 

  • Slice chicken breasts horizontally to make thin cutlets. Place in a bowl or zip-top bag. Add olive oil, lime juice, basil, coriander, chili powder, garlic powder, onion powder, black pepper, crushed red pepper, and salt. Mix well. Cover and marinate in the refrigerator for at least 1 hour, up to 12 hours.
  • Preheat grill to medium-high heat and lightly oil grates. Grill each cutlet 4–5 minutes per side until internal temp reaches 165°F (74°C). Remove and rest 3–5 minutes. Alternatively, sauté in a skillet with 2 tbsp olive oil for 4–5 minutes per side.
  • In a medium bowl, gently combine diced avocado, chopped cilantro, lime juice, salt, and garlic powder. Stir carefully to keep chunky and creamy.
  • Place grilled chicken on a plate and top with avocado mixture. Serve immediately with sides of choice.

Notes

Marinate chicken for at least 1 hour, up to 12 hours for deeper flavor. Keep avocado topping fresh by preparing just before serving. Optional garnishes include extra cilantro, chili flakes, or a squeeze of lime.
