Ingredients
  

  • 4 ripe tomatoes, cut into wedges
  • 1 large cucumber, sliced or chopped
  • 1 green bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 0.5 cup Kalamata olives
  • 200 g feta cheese, cut into chunks
  • 3 tbsp extra virgin olive oil
  • 1-2 tbsp red wine vinegar or fresh lemon juice
  • 1 tsp dried oregano
  • salt to taste

Instructions
 

  • Wash all vegetables thoroughly. Cut tomatoes into wedges, slice the cucumber, bell pepper, and red onion thinly.
  • In a large bowl, combine the tomatoes, cucumber, bell pepper, and onion. Toss gently.
  • Add Kalamata olives, sprinkle oregano, and season lightly with salt.
  • Drizzle olive oil and red wine vinegar (or lemon juice) over the salad. Toss gently to coat.
  • Top with chunks of feta cheese and a final sprinkle of oregano. Serve immediately.

Notes

Use ripe, fresh vegetables for the best flavor. Add dressing just before serving to keep the salad crisp. Soak red onions in cold water for a milder taste. For variation, add grilled chicken or chickpeas for extra protein.
