Ingredients
  

  • 4 salmon fillets
  • 1 lb baby potatoes, halved
  • 1 bunch fresh asparagus, trimmed
  • 3 tbsp olive oil
  • 2 tbsp butter, melted
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, chopped
  • 4 lemon wedges for serving

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.
  • Place the halved baby potatoes in a large bowl. Add 1 tablespoon olive oil, salt, black pepper, dried rosemary, and dried thyme. Toss until the potatoes are evenly coated.
  • Spread the potatoes in a single layer on the prepared baking sheet. Roast in the oven for 20 minutes until they begin to turn golden.
  • Remove the baking sheet from the oven and add the trimmed asparagus beside the potatoes. Drizzle with 1 tablespoon olive oil and lightly season with salt and pepper.
  • Arrange the salmon fillets in the center of the baking sheet between the vegetables, leaving space around each fillet.
  • In a small bowl, mix the remaining olive oil, melted butter, minced garlic, paprika, lemon juice, and lemon zest until well combined.
  • Spoon or brush the garlic lemon butter mixture generously over each salmon fillet.
  • Return the baking sheet to the oven and roast for 12–15 minutes, until the salmon flakes easily with a fork and reaches an internal temperature of about 145°F (63°C).
  • Remove from the oven and sprinkle chopped fresh parsley over the salmon and vegetables. Serve immediately with lemon wedges.

Notes

Pat the salmon dry before adding the sauce so it adheres better and roasts properly. Avoid overcrowding the pan so the vegetables roast instead of steaming. You can customize this dish by adding honey to the sauce for sweetness, red pepper flakes for heat, or Mediterranean ingredients like olives and cherry tomatoes.
