Ingredients
  

  • 1.5 lb sirloin steak, cut into bite-size cubes
  • 1.5 lb baby gold potatoes, halved
  • 2 tbsp olive oil or avocado oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika (optional)
  • 3 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 2 tbsp grated Parmesan (optional)
  • 1 pinch salt (for broccoli)

Instructions
 

  • Cut the steak into evenly sized cubes and pat dry with paper towels. Halve the baby potatoes and cut broccoli into bite-sized florets. Mince the garlic and shred the cheese if needed.
  • Heat 1 tablespoon of oil in a large skillet over medium heat. Add potatoes cut-side down in a single layer and cook 10–12 minutes, flipping occasionally, until golden brown and fork-tender. Remove and set aside.
  • Add a small splash of oil if needed. Sauté broccoli for 4–5 minutes until bright green and slightly tender. Sprinkle lightly with salt, then remove and set aside with potatoes.
  • Increase heat to medium-high and add remaining oil. Sear steak cubes in a single layer for about 2 minutes per side until browned and cooked to desired doneness. Cook in batches if necessary. Remove and set aside.
  • Reduce heat to medium. Add butter to the skillet. Once melted, stir in minced garlic and cook for about 30 seconds until fragrant.
  • Return potatoes and broccoli to the skillet along with steak. Toss gently in garlic butter. Sprinkle cheddar and Parmesan over broccoli, cover for 1–2 minutes until cheese melts, and serve immediately.

Notes

Pat steak dry before searing for the best crust. Cook steak in batches to avoid overcrowding. For extra flavor, add fresh thyme or rosemary to the garlic butter. For a lower-carb option, swap potatoes with cauliflower. Freeze without cheese for best texture and add fresh cheese when reheating.
