Ingredients
  

  • 1/4 cup unsalted butter, melted
  • 2 cloves garlic, finely minced
  • 1/2 tsp dried oregano
  • 1 pinch salt (optional)
  • 4 slices bread (sourdough or sandwich bread)
  • 3 cups shredded cheese (cheddar, mozzarella, Gruyère, or blend)

Instructions
 

  • In a small bowl, mix the melted butter, minced garlic, dried oregano, and salt if using. Stir well and set aside.
  • Shred the cheese if needed and combine different cheeses in a bowl for even melting.
  • Lay out the bread slices and divide the cheese evenly between two slices. Top with the remaining bread to form sandwiches.
  • Brush the outside of each sandwich generously with the garlic butter, covering edge to edge.
  • Heat a skillet over medium heat and cook the sandwiches for 3–4 minutes per side until golden brown and the cheese is melted.
  • Remove from the pan, rest for 1 minute, then slice and serve warm.

Notes

Use freshly grated cheese for the best melt and cook over medium heat to avoid burning the garlic butter. Sourdough bread gives the crispiest texture, but any sturdy bread works well.
