Ingredients
  

  • rice paper wrappers
  • rice vermicelli noodles
  • lettuce leaves
  • avocado, thinly sliced
  • mango, julienned
  • red bell pepper, thinly sliced
  • carrots, julienned
  • cucumber, julienned
  • purple cabbage, shredded
  • fresh mint leaves
  • fresh cilantro
  • peanut butter
  • soy sauce
  • maple syrup
  • lime juice
  • warm water
  • fresh ginger, grated
  • garlic, minced

Instructions
 

  • Cook rice vermicelli noodles according to package instructions. Drain and rinse under cold water, then set aside.
  • Wash and slice all vegetables and fruits into thin strips. Arrange ingredients in separate bowls for easy assembly.
  • Dip a rice paper wrapper into warm water for 8–10 seconds until soft but still slightly firm.
  • Place wrapper on a flat surface and layer lettuce, noodles, avocado, mango, vegetables, and herbs in the center.
  • Fold sides inward and roll tightly from the bottom to seal the spring roll.
  • Repeat with remaining wrappers and fillings until all rolls are assembled.
  • In a bowl, whisk together peanut butter, soy sauce, maple syrup, lime juice, warm water, ginger, and garlic until smooth and creamy.
  • Serve spring rolls fresh with peanut dipping sauce on the side.

Notes

Do not oversoak rice paper as it continues to soften after dipping. Keep fillings dry and thinly sliced for easier rolling. Rolls are best enjoyed fresh but can be stored for up to 24 hours covered with a damp towel. Peanut sauce can be refrigerated for up to 5 days; add warm water if it thickens.
