Equipment

  • large pot
  • large skillet
  • colander
  • wooden spoon or tongs

Ingredients

  • 1 lb spaghetti
  • 12 oz raw shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 2 cloves garlic, finely minced
  • 4 cups tomato purée or crushed tomatoes
  • 1/4 cup heavy cream
  • salt, to taste
  • black pepper, to taste
  • red pepper flakes (optional)
  • fresh parsley, chopped (for garnish)

Instructions

  • Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook according to package directions until al dente. Reserve about 1/2 cup of pasta water, then drain and set aside.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the shrimp in a single layer and cook 1–2 minutes per side until pink and opaque. Remove and set aside.
  • Add the remaining olive oil to the skillet. Stir in the minced garlic and cook about 30 seconds until fragrant.
  • Pour in the tomato purée. Season with salt, black pepper, and red pepper flakes if using. Simmer uncovered for 8–10 minutes until slightly thickened.
  • Lower the heat and stir in the heavy cream until the sauce becomes smooth and lightly pink.
  • Add the cooked shrimp back to the skillet and simmer 1–2 minutes until warmed through.
  • Add the drained spaghetti to the skillet and toss to coat evenly. Use reserved pasta water if needed to loosen the sauce.
  • Remove from heat, garnish with fresh parsley, and serve immediately.

Notes

For best results, avoid overcooking the shrimp and simmer the sauce gently to keep it smooth. You can substitute half-and-half or coconut cream for a lighter or dairy-free version, and adjust red pepper flakes to control heat.
