Ingredients
  

  • 4 salmon fillets (5–6 oz each)
  • 2 tbsp olive oil or avocado oil
  • salt and black pepper, to taste
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1.5 tbsp mild red or yellow curry paste
  • 13.5 oz full-fat coconut milk
  • 0.5 cup low-sodium chicken or vegetable broth
  • 1 tbsp soy sauce or tamari
  • 1 tbsp fresh lime juice
  • 2.5 cups broccoli florets
  • cooked white rice, for serving
  • fresh cilantro or parsley, for garnish

Instructions
 

  • Prepare the white rice according to package instructions. Fluff and keep warm.
  • Season salmon with salt and pepper. Sear in hot oil for 3–4 minutes per side until lightly golden. Remove and set aside.
  • Sauté onion in the same skillet for 2–3 minutes until soft. Add garlic and ginger and cook briefly until fragrant.
  • Stir in curry paste and cook for about 1 minute to bloom the spices.
  • Add coconut milk, broth, and soy sauce. Simmer 4–5 minutes until slightly thickened.
  • Add broccoli and simmer 3–5 minutes until tender and bright green.
  • Return salmon to the skillet and simmer 3–4 minutes until cooked through.
  • Stir in lime juice, adjust seasoning, and serve over rice with fresh herbs.

Notes

Use mild curry paste for a family-friendly version or add extra curry paste or chili flakes for more heat. Full-fat coconut milk gives the creamiest sauce, but light coconut milk also works. Best enjoyed fresh, though leftovers reheat gently.
