Ingredients
  

  • 300 g pasta (fusilli, penne, or rigatoni)
  • 2 cups cooked chicken (shredded or diced)
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp fresh parsley, chopped

Instructions
 

  • Bring a large pot of salted water to a boil and cook the pasta until slightly under al dente. Drain and set aside.
  • Heat olive oil in a large pan over medium heat. Sauté the chopped onion until soft, then add mushrooms and cook until browned. Stir in garlic and cook until fragrant.
  • Add chicken broth and let it simmer briefly. Stir in heavy cream and bring to a gentle simmer. Add parmesan cheese and stir until smooth. Season with salt and pepper.
  • Add cooked chicken and drained pasta to the sauce. Mix well until everything is evenly coated.
  • Transfer the mixture to a greased baking dish and spread evenly. Top with cheddar and mozzarella cheese.
  • Bake in a preheated oven at 180°C (350°F) for 20–25 minutes until cheese is melted and golden.
  • Remove from oven, let rest for a few minutes, then garnish with fresh parsley before serving.

Notes

Undercook pasta slightly before baking to avoid mushy texture. Use freshly grated parmesan for smoother melting. Add vegetables like spinach or broccoli for extra nutrition. For a lighter version, substitute heavy cream with half-and-half or milk with a thickener. Let the dish rest before serving for best texture.
