Ingredients
  

  • 2 cups cooked chicken breast, shredded
  • 1/2 cup mayonnaise
  • 1 stalk celery, finely chopped
  • 1/4 cup red onion, finely diced
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/4 tsp garlic powder
  • salt and black pepper to taste
  • 1 tbsp fresh parsley, chopped
  • 4 slices whole wheat bread
  • 2 leaves lettuce
  • 4 slices tomato

Instructions
 

  • Place the shredded cooked chicken breast into a large mixing bowl. Ensure pieces are bite-sized for even mixing.
  • Add finely chopped celery and diced red onion to the chicken.
  • Stir in mayonnaise, Dijon mustard, and lemon juice until evenly coated.
  • Sprinkle garlic powder, salt, and black pepper. Mix and taste.
  • Stir in chopped parsley for a fresh flavor.
  • Lightly toast the bread slices until golden and slightly crisp.
  • Place lettuce on two slices of toasted bread. Spoon chicken salad on top.
  • Top with tomato slices and cover with remaining bread slices.
  • Cut sandwiches diagonally and serve immediately.

Notes

Try using rotisserie chicken for convenience. Substitute half of the mayonnaise with Greek yogurt for a lighter version. Use fresh herbs like parsley for a bright flavor. Toast the bread lightly to prevent sogginess. Chill the chicken salad for 20–30 minutes for deeper flavor.
