Ingredients
  

  • 4 cups shredded chicken (rotisserie works perfectly)
  • 12 oz frozen mixed vegetables (peas, carrots, corn, and green beans)
  • 14.5 oz chicken broth
  • 10.5 oz cream of chicken soup
  • 2 cups whole milk
  • 1/2 cup butter, melted
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1 box Red Lobster Cheddar Bay Biscuit mix (including seasoning packet)
  • 2/3 cup milk (for biscuit mix)

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
  • Spread the melted butter in the bottom of the baking dish. Add the shredded chicken evenly, then layer the frozen vegetables on top.
  • In a medium bowl, combine the Cheddar Bay Biscuit mix with the seasoning packet and 2/3 cup milk. Whisk until smooth and pour over the vegetables — do not stir.
  • Mix the chicken broth with the cream of chicken soup until smooth. Pour evenly over the biscuit topping — do not stir.
  • Bake uncovered for 55–65 minutes, until the top is golden brown and the filling is bubbling around the edges.
  • Let the casserole rest 10 minutes before serving to allow layers to set.

Notes

Try variations like adding shredded cheese, herbs, or spices. Use leftover rotisserie chicken for quick prep. Freeze assembled casserole before baking for later use. For a lighter version, swap whole milk for 2% or plant-based milk, and use low-sodium soup.
