Ingredients
  

  • 4 slices thick-cut bread
  • 3 eggs (for French toast)
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 tbsp butter
  • powdered sugar, for dusting
  • maple syrup, for serving
  • 3 eggs (for cheesy scrambled eggs)
  • 1/2 cup shredded cheddar cheese
  • 1 tbsp butter
  • salt and black pepper to taste
  • 1 cup chopped beef bacon
  • 2 cups diced potatoes
  • 1 cup baby carrots
  • 2 tbsp olive oil
  • 1/2 tsp paprika
  • salt and black pepper, to taste

Instructions
 

  • Preheat oven to 400°F (200°C). Toss potatoes and carrots with olive oil, paprika, salt, and pepper. Spread on a baking tray and roast for 25–30 minutes until golden and tender.
  • In a medium bowl, whisk 3 eggs, milk, vanilla, and cinnamon. Dip each bread slice in the mixture, coating both sides.
  • Heat butter in a skillet over medium heat. Cook each slice for 2–3 minutes per side until golden brown. Dust with powdered sugar and serve with maple syrup.
  • Fry chopped beef bacon in a pan until crispy. Drain on paper towels.
  • Beat remaining eggs with salt and pepper. Heat butter in a non-stick skillet over medium-low heat. Cook eggs slowly, stirring gently. Add shredded cheddar cheese until creamy and melted.
  • Assemble the platter with French toast, cheesy scrambled eggs, crispy bacon, and roasted vegetables. Serve immediately.

Notes

Use plant-based alternatives for vegetarian or lighter options. Cook scrambled eggs over low heat for creaminess. Roast vegetables uniformly for even cooking. French toast can be dusted with powdered sugar or drizzled with syrup as desired.
