Ingredients
  

  • 1 lb ground beef (or ground turkey/chicken)
  • 1 packet taco seasoning
  • 10 oz diced tomatoes with green chilies, undrained
  • 1/2 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • salt and pepper to taste
  • 8 small flour tortillas or taco shells
  • optional: fresh cilantro or chopped green onions for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Sauté onion and garlic for 2–3 minutes until softened.
  • Add ground beef and cook until browned, breaking apart with a spoon. Drain excess fat if necessary.
  • Stir in taco seasoning and mix well to coat the beef evenly.
  • Pour in diced tomatoes with green chilies and reduce heat to low. Stir in cream cheese until melted and smooth.
  • Add shredded cheddar cheese and stir until fully blended. Simmer 3–5 minutes until mixture thickens.
  • Warm tortillas in a pan or microwave until pliable.
  • Spoon beef mixture into tortillas. Garnish with cilantro or green onions if desired. Serve immediately.

Notes

Use softened cream cheese for smooth melting. Adjust spice by adding extra chilies or hot sauce. Swap cheddar with Monterey Jack, Colby, or vegan cheese. Ground turkey, chicken, or plant-based options work well as alternatives to beef. Keep tortillas warm just before serving for best texture.
