Ingredients
  

  • 1.5 lb ground beef (80/20)
  • 1 tbsp Montreal steak seasoning
  • 3 tbsp butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups milk
  • 2 cups beef stock
  • 2 cups shredded cheddar cheese
  • 3 celery stalks, diced
  • 4 medium potatoes, peeled and cubed
  • salt and pepper, to taste
  • diced dill pickles for garnish (optional)

Instructions
 

  • In a large pot, melt 1 tablespoon of butter over medium heat. Add the ground beef and sprinkle with Montreal seasoning. Cook until browned, breaking it into small pieces. Remove the beef and set aside, leaving some fat in the pot.
  • Add the remaining butter to the pot. Sauté the diced onion and minced garlic until translucent and fragrant, about 3–4 minutes.
  • Sprinkle the flour over the sautéed onions and garlic and stir constantly for 1–2 minutes. Gradually whisk in the milk and beef stock to create a smooth soup base. Bring to a gentle simmer.
  • Stir in the shredded cheddar cheese until melted. Add the diced celery, cubed potatoes, and the cooked beef back into the pot. Simmer on low heat for 20–25 minutes until the potatoes are tender.
  • Taste the soup and adjust salt and pepper as needed. Serve hot and garnish with diced dill pickles for a classic cheeseburger flavor if desired.

Notes

Use sharp cheddar for stronger flavor and cut potatoes evenly for consistent cooking. Stir continuously after adding flour to prevent lumps and keep the soup smooth. Simmer gently once the cheese is added to avoid curdling. For extra flavor, top with shredded cheese, green onions, or crumbled bacon. Add diced dill pickles just before serving for a classic cheeseburger tang.
