Equipment

  • large pot
  • large skillet
  • mixing spoon
  • serving plates

Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1–2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 lb cheese tortellini (fresh or frozen)
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • to taste salt
  • to taste black pepper
  • ¼ tsp crushed red pepper flakes (optional)
  • for garnish fresh parsley, chopped

Instructions

  • Bring a large pot of salted water to a boil. Cook the tortellini according to package directions until al dente. Drain and set aside, reserving a small cup of pasta water.
  • Toss chicken pieces in Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 5–7 minutes, turning occasionally, until browned and cooked through. Remove from skillet and set aside.
  • In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant. Slowly pour in heavy cream, stirring to combine. Bring to a gentle simmer, then stir in Parmesan, salt, black pepper, and optional red pepper flakes. Let the sauce thicken for 2–3 minutes.
  • Add the cooked tortellini and chicken back into the skillet. Toss everything together to ensure every piece is coated in the creamy garlic sauce. If the sauce is too thick, add a splash of reserved pasta water until it reaches your desired consistency.
  • Plate the tortellini and chicken, sprinkle with fresh parsley, and serve immediately. Add a side of garlic bread or a simple green salad to round out the meal.

Notes

Adjust Cajun seasoning to control heat. Try adding vegetables or swapping chicken for shrimp for variations. Serve immediately for best flavor, and use reserved pasta water to adjust sauce consistency.
