Ingredients
  

  • 4 slices thick brioche bread
  • 2 eggs
  • 1/2 cup milk
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 tbsp butter
  • 4 eggs (for scrambled eggs)
  • 2 tbsp milk (for scrambled eggs)
  • salt and black pepper, to taste
  • 1 tbsp butter (for scrambled eggs)
  • 1 tbsp fresh chives, chopped
  • 4 turkey sausage links
  • 4 turkey bacon strips
  • 1/2 cup blueberries
  • 1/2 cup strawberries, sliced
  • maple syrup for serving

Instructions
 

  • Whisk together 2 eggs, 1/2 cup milk, sugar, vanilla extract, and cinnamon in a medium bowl. Dip each brioche slice into the mixture, coating both sides.
  • Heat 2 tablespoons butter in a skillet over medium heat. Cook brioche slices 2-3 minutes per side until golden. Keep warm.
  • In a separate skillet, cook turkey sausage and bacon over medium heat until browned and heated through. Keep warm.
  • Whisk 4 eggs with 2 tablespoons milk, salt, and pepper. Melt 1 tablespoon butter in a pan over low heat, cook eggs slowly while stirring gently, remove while slightly soft, and fold in chives.
  • Arrange French toast on a plate, add scrambled eggs, turkey sausage, and turkey bacon. Place blueberries and strawberries on the side, top French toast with butter, and drizzle with maple syrup.

Notes

Use thick brioche slices to prevent sogginess. Keep scrambled eggs slightly undercooked for creaminess. Fresh berries can be lightly macerated with sugar for extra sweetness. Unsalted butter allows better control over seasoning levels. Make French toast fresh and assemble immediately for best texture.
