Ingredients
  

  • 1 lb skirt steak, trimmed and cut into portions
  • 6 tsp minced garlic
  • 5 tbsp unsalted butter
  • 1/4 cup fresh parsley, chopped
  • to taste salt and black pepper
  • 3 large potatoes, peeled and cut into fries (or 1 bag frozen fries)
  • 2 tbsp olive oil (if baking) or enough for deep frying
  • to taste salt for fries
  • 4 cups mixed salad greens
  • 1 small cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 2 tbsp olive oil for salad
  • 1 tbsp red wine vinegar or lemon juice
  • to taste salt & pepper for salad

Instructions
 

  • Pat the skirt steak dry with paper towels. Season both sides with salt and black pepper. Let sit at room temperature for 15–20 minutes.
  • Melt butter over medium heat in a small saucepan. Add minced garlic and cook 1–2 minutes until fragrant. Stir in parsley and remove from heat.
  • Heat a large skillet over medium-high heat. Add oil if needed. Sear steak 2–4 minutes per side until desired doneness. Remove and rest 5 minutes before slicing.
  • For fries, oven method: toss potato fries in olive oil and salt, bake at 425°F (220°C) for 25–30 minutes, flipping halfway. Deep-fry method: heat oil to 350°F (175°C) and fry in batches until golden. Drain and season with salt.
  • Combine salad greens, cucumber, tomatoes, and red onion. Drizzle with olive oil and vinegar (or lemon juice). Season with salt & pepper and toss.
  • Slice the rested steak against the grain. Arrange on a plate, drizzle with garlic butter, and serve with fries and salad.
