Ingredients
  

  • 1 package blueberry flavored gelatin powder
  • 2 cups boiling water
  • 1 cup cold water
  • 1 cup heavy whipping cream
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup plain cream cheese, softened
  • 1/4 cup sweetened condensed milk
  • 1/2 cup fresh blueberries
  • fresh mint leaves for garnish

Instructions
 

  • Place the blueberry flavored gelatin powder in a heatproof bowl. Pour in the boiling water and stir continuously until the gelatin powder fully dissolves.
  • Add the cold water to the gelatin mixture and stir well to slightly cool the liquid.
  • Carefully pour the gelatin mixture halfway into clear dessert cups so each cup has an even amount.
  • Place the cups in the refrigerator and chill for 1 to 2 hours until the jelly layer is fully firm.
  • In a mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Add the condensed milk and vanilla extract to the cream cheese and mix until fully combined and silky.
  • In another bowl, whip the heavy cream with powdered sugar until soft peaks form and the mixture becomes fluffy.
  • Gently fold the whipped cream into the cream cheese mixture using a spatula until light and smooth.
  • Spoon or pipe the cream mixture over the firm blueberry jelly layer, spreading it evenly to create a clean top layer.
  • Refrigerate the dessert cups for another 30 to 40 minutes. Garnish with fresh blueberries and mint leaves before serving and enjoy chilled.

Notes

Make sure the jelly layer is completely firm before adding the cream layer to keep the layers clean and defined. Always use softened cream cheese to avoid lumps and gently fold the whipped cream to maintain a light, airy texture. Clear dessert cups help showcase the beautiful layered look. For variations, you can replace blueberry gelatin with strawberry, raspberry, mango, or mixed berry gelatin while keeping the same method.
