Ingredients
  

  • 200 g digestive biscuits, crushed
  • 100 g melted butter
  • 400 g cream cheese, softened
  • 0.5 cup sugar
  • 2 eggs
  • 200 ml heavy cream
  • 1 tsp vanilla extract
  • 1 cup strawberries, chopped
  • 0.5 cup raspberries
  • 0.5 cup blueberries
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • fresh raspberries and blueberries for decoration

Instructions
 

  • Preheat oven to 180°C (350°F). Mix crushed biscuits with melted butter and press into springform pan. Bake 10 minutes and cool.
  • Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in heavy cream and vanilla extract. Pour over cooled crust and bake 40–45 minutes. Cool completely and refrigerate at least 3 hours.
  • Cook strawberries with sugar and lemon juice until softened. Cool and spread over chilled cheesecake. Decorate with fresh raspberries and blueberries.
  • Slice and serve chilled.

Notes

Use room-temperature ingredients for a smooth filling. Avoid overbaking to prevent cracks. Chill cheesecake for at least 3 hours before serving. Fresh berries enhance flavor and presentation. Optional: brush berries with warmed fruit preserves for shine.
