Ingredients
  

  • 6 chicken drumsticks
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup barbecue sauce
  • 2 large Russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/3 cup sour cream
  • 2 tbsp green onions, sliced
  • 1 tbsp butter
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil to make cleanup easier.
  • Pat the chicken drumsticks dry with paper towels. Place them in a bowl, drizzle with olive oil, and season with smoked paprika, garlic powder, onion powder, salt, and black pepper. Toss until evenly coated.
  • Arrange the drumsticks in a single layer on the prepared baking sheet and roast in the oven for about 30 minutes.
  • Remove the chicken from the oven and brush each drumstick generously with barbecue sauce. Return to the oven and cook for another 10–15 minutes until caramelized and fully cooked.
  • While the chicken cooks, wash the Russet potatoes and pierce each several times with a fork. Place them directly on the oven rack or a baking tray and bake for 45–50 minutes until tender.
  • Carefully remove the baked potatoes from the oven. Slice them open lengthwise and fluff the interior with a fork.
  • Add butter to each potato and top with shredded cheddar cheese so it melts slightly.
  • Finish the potatoes with sour cream, sliced green onions, and a sprinkle of salt and pepper. Serve the barbecue chicken drumsticks alongside the loaded baked potatoes.

Notes

For crispier chicken, place the drumsticks on a wire rack over the baking sheet so hot air circulates around them. Add barbecue sauce only during the final minutes of cooking to prevent burning while still allowing it to caramelize. You can customize the potatoes with toppings like diced tomatoes, sweet corn, sautéed mushrooms, or extra cheese. Greek yogurt can replace sour cream for a lighter option.
