Ingredients
  

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup milk (or non-dairy milk)
  • 1 egg
  • 2 tbsp melted butter (or plant-based butter)
  • 1 tsp vanilla extract
  • whipped cream for topping
  • 1 fresh strawberry for garnish
  • maple syrup for serving
  • 4 large eggs
  • 1/4 cup milk (or plant-based milk)
  • salt and black pepper to taste
  • 6 breakfast sausage links (turkey, chicken, or plant-based optional)
  • 2 medium potatoes, diced
  • 1 tbsp olive oil
  • 1 tbsp butter (or plant-based alternative)
  • 2 tbsp feta cheese, crumbled (optional)
  • 1 tbsp fresh parsley, chopped

Instructions
 

  • Preheat oven to 200°F (95°C) to keep cooked items warm.
  • In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together milk, egg, melted butter, and vanilla extract.
  • Gently combine wet and dry ingredients, being careful not to overmix.
  • Heat a non-stick skillet over medium heat and lightly grease with butter.
  • Pour 1/4 cup batter per pancake and cook until bubbles form on the surface. Flip and cook an additional 1–2 minutes. Keep warm in the oven.
  • Heat olive oil and butter in a skillet over medium heat.
  • Add diced potatoes and cook, stirring occasionally, until golden and crispy, about 12–15 minutes.
  • Sprinkle with feta cheese and chopped parsley. Set aside in the oven to stay warm.
  • In another skillet over medium heat, cook sausage links until browned and fully cooked, about 8–10 minutes.
  • In a bowl, whisk eggs with milk, salt, and black pepper.
  • Scramble in a non-stick pan over medium-low heat until soft and fluffy.
  • Stack pancakes and top with whipped cream and a fresh strawberry. Drizzle with maple syrup.
  • Serve alongside scrambled eggs, sausage links, and feta-topped home fries.

Notes

Do not overmix the pancake batter to keep pancakes light and fluffy. Cook scrambled eggs on medium-low heat so they remain soft and creamy. Keep finished components warm in a 200°F (95°C) oven while cooking the rest. Cook potatoes in batches if needed to keep them crispy. Fresh parsley adds color and flavor to the home fries.
