Ingredients
  

  • 1 lb raw shrimp (16–20 count), peeled and deveined
  • 2 large eggs
  • 1/4 cup milk or buttermilk
  • 2 cups seasoned breadcrumbs
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 2 cups vegetable or corn oil for frying
  • 2 large russet potatoes
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • lemon wedges for serving (optional)
  • cocktail, tartar, or remoulade sauce (optional)
  • coleslaw or green salad (optional)

Instructions
 

  • Peel and devein shrimp, pat dry.
  • Whisk eggs and milk with a pinch of salt and pepper for egg wash.
  • Dip shrimp in egg wash, coat with seasoned breadcrumbs.
  • Heat oil to 350–375°F, fry shrimp in batches 2–4 minutes until golden, drain on paper towels.
  • Peel and cut potatoes, toss with olive oil, salt, and pepper. Bake at 425°F for 20–25 minutes, flipping halfway, or deep fry 3–4 minutes.
  • Plate shrimp with fries, add lemon wedges and sauces, garnish with parsley.

Notes

Pat shrimp dry for extra crispiness. Fry in small batches to maintain oil temperature. Use panko breadcrumbs for a light, airy coating. Serve immediately for best texture. Gluten-free alternatives include rice flour or cornmeal.
