Ingredients
  

  • 2 large chicken breasts, sliced horizontally
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • salt and black pepper to taste
  • vegetable oil for frying
  • 1/2 cup mayonnaise
  • 1/3 cup finely grated parmesan cheese
  • 2–3 anchovy fillets (optional)
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 clove garlic, minced
  • 2–3 tbsp milk to thin dressing
  • 1 large head romaine lettuce, chopped
  • 1 cup ciabatta bread, cubed
  • 1/4 cup grated parmesan
  • 2 tbsp olive oil
  • smoked turkey strips or sautéed mushrooms instead of bacon

Instructions
 

  • Combine mayonnaise, parmesan, anchovies, lemon juice, Dijon mustard, Worcestershire sauce, garlic, and milk in a bowl or blender. Blend or whisk until smooth. Season with salt and pepper, then refrigerate.
  • Preheat oven to 180°C (350°F). Toss ciabatta cubes with olive oil and salt, sprinkle parmesan, and bake 10–15 minutes until golden and crispy.
  • Season flour with salt, pepper, and garlic powder. Coat chicken in flour, dip in beaten eggs, then coat with panko breadcrumbs.
  • Heat oil over medium heat. Fry chicken 4–5 minutes per side until golden and cooked through. Drain on paper towels and slice into strips.
  • Toss chopped romaine with dressing, add croutons and smoked turkey or substitute, and mix gently.
  • Top salad with sliced crispy chicken and extra parmesan. Drizzle more dressing if desired and serve immediately.

Notes

For a lighter version, bake or air-fry the chicken instead of frying. Use low-fat mayonnaise or Greek yogurt in the dressing to reduce calories. Anchovies can be substituted with capers, soy sauce, or miso for umami flavor. Always use fresh lemon juice, and dry lettuce thoroughly for dressing adherence.
