Ingredients
  

  • 2 cups penne pasta
  • 2 chicken breasts, diced
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 tsp fajita seasoning
  • 1 tsp paprika
  • salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup cream cheese
  • 1/2 cup chicken broth
  • 2 tbsp fresh cilantro, chopped

Instructions
 

  • Bring a large pot of salted water to a boil and cook penne pasta until al dente. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add diced chicken and season with fajita seasoning, paprika, salt, and pepper. Cook until golden and fully cooked. Remove from skillet.
  • In the same skillet, sauté sliced bell peppers and onion until softened and slightly charred.
  • Add minced garlic and sauté for 1 minute. Pour in chicken broth and deglaze the pan, scraping up browned bits.
  • Stir in heavy cream and cream cheese until the sauce is smooth and creamy.
  • Return cooked chicken to the skillet and mix with sauce. Add cooked pasta and toss until evenly coated.
  • Simmer for 2–3 minutes until heated through and slightly thickened. Garnish with fresh cilantro.

Notes

Slice vegetables evenly for consistent cooking. Don’t overcook the pasta—al dente is ideal. Use fresh garlic for best flavor. Simmer sauce to thicken naturally. Season gradually and taste as you go. Cook chicken in batches to avoid overcrowding.
