Instructions
 

  • Heat a skillet over medium heat and cook the sausage for 4–5 minutes per side until browned and cooked through.
  • Transfer sausage to a plate and keep warm. Leave a little fat in the skillet.
  • Reduce heat to medium-low, add butter or oil, and crack eggs into the skillet or add whisked eggs for scrambling.
  • Cook eggs to desired doneness: fried, over-easy, or scrambled, adjusting time as needed.
  • Season eggs lightly with salt and pepper.
  • Plate sausage and eggs with optional sides and serve immediately.

Notes
