Ingredients
  

  • 1 lb ground chicken
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tbsp vegetable oil
  • 1 cup water chestnuts, finely chopped
  • 1 cup shiitake mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 3 green onions, sliced
  • 1 head iceberg or butter lettuce
  • 2 tbsp soy sauce (for sauce)
  • 1 tbsp rice vinegar (for sauce)
  • 1-2 tsp chili garlic sauce
  • 1 tsp hot mustard (optional)
  • 1 tsp chili oil (optional)
  • 1 tbsp green onions, chopped (for sauce)

Instructions
 

  • In a small bowl, mix soy sauce, mirin, oyster sauce, and rice vinegar. Set aside.
  • Heat oil in a skillet over medium-high heat. Cook ground chicken until browned and fully cooked.
  • Add garlic, mushrooms, and water chestnuts. Cook for 3–4 minutes until slightly softened.
  • Pour in the sauce mixture, stir well, and simmer for a few minutes. Add green onions and mix.
  • In another bowl, whisk soy sauce, rice vinegar, chili garlic sauce, hot mustard, chili oil, and green onions.
  • Spoon chicken mixture into lettuce leaves and serve with spicy sauce.

Notes

Use fresh, crisp lettuce like iceberg or butter lettuce for best results. Adjust spice level by reducing chili garlic sauce or chili oil. Mirin can be substituted with a mix of apple juice and vinegar. Store filling separately from lettuce for freshness. Filling can be refrigerated for 3–4 days or frozen up to 2 months.
