Ingredients
  

  • 1 pound gnocchi (store-bought or homemade)
  • 2 tbsp olive oil, divided
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • to taste salt and freshly ground black pepper
  • 2 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • 1/2 cup chicken broth
  • 1 tsp dried Italian herbs
  • 1 cup fresh mozzarella, cut into small cubes
  • 1/4 cup fresh basil, chopped
  • 1 tbsp balsamic glaze (optional)

Instructions
 

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken pieces generously with salt and black pepper. Add the chicken to the skillet in a single layer and cook for 5–6 minutes until golden brown and fully cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for 30 seconds until fragrant. Stir in the halved cherry tomatoes and cook for 3–4 minutes until they soften and release juices.
  • Add the gnocchi to the skillet with the tomatoes. Pour in chicken broth, sprinkle in dried Italian herbs, and season lightly with salt and pepper. Cover and cook for 4–5 minutes, stirring occasionally, until gnocchi are tender and slightly golden on the bottom.
  • Return cooked chicken to the skillet and gently stir to combine. Remove from heat and fold in mozzarella cubes, allowing residual heat to soften and melt the cheese.
  • Sprinkle chopped fresh basil over the top and drizzle with balsamic glaze if desired. Serve immediately while warm and melty.

Notes

Gnocchi cooks right in the skillet for extra flavor. Substitute chicken thighs for a juicier texture or mushrooms/chickpeas for a vegetarian version. Add basil at the end for freshness and drizzle with balsamic glaze if desired.
