Ingredients
  

  • 3 1/2 cups all-purpose flour
  • 1 1/2 tsp salt
  • 1/2 tsp active dry yeast
  • 1 3/4 cups warm water
  • 2 tbsp olive oil (plus more for drizzling)
  • 1 burrata cheese ball
  • 2-3 ripe tomatoes (sliced)
  • 1 cup arugula or microgreens
  • 2-3 tbsp balsamic glaze
  • 2 tbsp olive oil
  • flaky sea salt to taste
  • smoked turkey or grilled chicken (optional)

Instructions
 

  • In a large bowl, mix flour, salt, and yeast. Add warm water and stir until a sticky dough forms. Cover and let rest at room temperature for 12–18 hours until doubled and bubbly.
  • Drizzle olive oil into a baking pan. Transfer dough and gently stretch to fit. Let rest 1–2 hours until puffy.
  • Preheat oven to 425°F (220°C). Dimple dough, drizzle with olive oil, and sprinkle with salt. Bake 20–25 minutes until golden. Cool completely.
  • Slice the focaccia horizontally to create top and bottom layers.
  • Layer the bottom half with protein (optional), tomato slices, and arugula. Tear burrata and spread evenly. Drizzle with olive oil and balsamic glaze, then sprinkle with sea salt.
  • Place the top bread layer, slice into portions, and serve immediately.

Notes

Use store-bought focaccia to save time or make it from scratch for a bakery-style result. Substitute burrata with fresh mozzarella if needed. Add grilled chicken or smoked turkey for extra protein, or use roasted vegetables for a vegetarian version. Assemble just before serving to prevent sogginess.
