Ingredients
  

  • 2 large chicken breasts, cut into chunks
  • 16 fresh rosemary sprigs (plus 1 tbsp chopped rosemary)
  • 1/2 cup buffalo hot sauce
  • 1/4 cup apple juice
  • 2 tbsp olive oil or melted butter
  • salt and black pepper to taste
  • 1/2 cup blue cheese dressing or yogurt-based dressing

Instructions
 

  • Whisk buffalo sauce, apple juice, olive oil, and chopped rosemary in a bowl. Season with salt and pepper.
  • Add chicken to the marinade, cover, and refrigerate for at least 1 hour.
  • Strip rosemary leaves except for a small cluster at the top. Thread chicken onto rosemary sprigs.
  • Grill or grill pan over medium-high heat for 4–5 minutes, turning occasionally, until chicken is cooked.
  • Brush skewers with extra marinade while cooking for flavor and juiciness.
  • Serve immediately with creamy dip on the side.

Notes

Marinate chicken for at least 1 hour to enhance flavor. Adjust buffalo sauce for desired spice level. Use yogurt-based dressing if you prefer a milder dip. Store raw marinated chicken up to 24 hours in the fridge; cooked skewers last 3 days refrigerated.
