Ingredients
  

  • 500 g lean ground beef
  • 4 tbsp butter, divided
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 3 cups potatoes, diced (russet or Yukon Gold)
  • 4 cups chicken broth
  • 3 cups milk
  • 2 tbsp all-purpose flour
  • 2 cups sharp cheddar cheese, shredded
  • 0.5 cup sour cream
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp dried basil
  • 0.5 tsp dried parsley

Instructions
 

  • Heat a large pot or Dutch oven over medium heat. Add the ground beef and cook until fully browned, breaking it up as it cooks. Drain excess grease and set the beef aside.
  • In the same pot, melt part of the butter over medium heat. Add the diced onion, carrots, and celery and cook for about 5 minutes until softened. Stir in the garlic and cook for another 30 seconds.
  • Return the cooked beef to the pot. Add the diced potatoes and chicken broth. Bring to a gentle boil, then reduce heat and simmer for 10–15 minutes, until the potatoes are fork-tender.
  • In a small saucepan, melt the remaining butter and whisk in the flour to form a roux. Cook for 1–2 minutes, then slowly whisk in the milk until smooth. Stir this mixture into the soup.
  • Lower the heat and stir in the shredded cheddar cheese, salt, pepper, basil, and parsley. Stir until the cheese is fully melted and the soup is creamy.
  • Remove the pot from heat and gently stir in the sour cream. Taste and adjust seasoning as needed, then serve warm.

Notes

For best results, shred your own cheese so it melts smoothly and avoid boiling the soup after adding dairy. This soup thickens as it rests and tastes even better the next day. If needed, add a splash of milk when reheating to restore creaminess.
