Ingredients
  

  • 1 pound flank steak, cut into small cubes
  • 3 cups cooked long-grain or jasmine rice (chilled)
  • 2 large eggs
  • 1 cup broccoli florets, chopped small
  • 1 cup carrots, diced
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 tbsp neutral oil (avocado or vegetable)
  • to taste salt and black pepper
  • Optional: sesame seeds or sliced green onions for garnish

Instructions
 

  • Heat 1 tablespoon of neutral oil in a large skillet or wok over medium-high heat. Beat the eggs lightly in a bowl, then pour them into the pan. Scramble gently until just set. Remove from the pan and set aside.
  • Add another tablespoon of oil to the pan. Increase heat to high. Add the cubed flank steak in a single layer. Let it sear without moving for about 1–2 minutes. Stir and cook until browned and just cooked through. Remove and set aside.
  • Add the diced carrots and broccoli. Stir-fry for 3–4 minutes until slightly tender but still crisp. Add the minced garlic and cook for 30 seconds until fragrant.
  • Add the chilled rice to the pan. Break up any clumps with a spatula. Press the rice into the pan and let it cook undisturbed for 1–2 minutes. Stir and repeat once more for texture.
  • Return the cooked beef and scrambled eggs to the skillet. Pour in the soy sauce and oyster sauce. Toss everything together until evenly coated.
  • Drizzle sesame oil over the fried rice and give it one final toss. Taste and adjust seasoning with salt and pepper if needed. Serve hot, topped with sesame seeds or sliced green onions.

Notes

Rice Tip: Cold, day-old rice works best. Fresh rice can be too soft and clumpy. Chill fresh rice for at least 30 minutes before using.
Beef Options: Flank steak is ideal, but sirloin or thinly sliced steak strips work too.
Vegetable Swaps: Substitute peas, bell peppers, corn, zucchini, or mushrooms.
Oyster Sauce Substitute: Use additional soy sauce plus a squeeze of lemon juice.
Healthier Adjustments: Use low-sodium soy sauce and increase vegetables for extra fiber.
