Ingredients
  

  • 1/2 cup unsalted butter
  • 3/4 cup pure maple syrup
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 1/2 cup almond butter
  • 3 cups old-fashioned rolled oats

Instructions
 

  • Line a baking sheet with parchment or wax paper and measure all ingredients ahead of time.
  • In a saucepan over medium heat, combine butter, maple syrup, and milk. Bring to a rolling boil and cook for about 3 minutes while stirring occasionally.
  • Remove from heat and stir in vanilla extract, salt, and almond butter until smooth and glossy.
  • Add rolled oats and stir until fully coated and the mixture thickens.
  • Drop spoonfuls of the mixture onto the prepared baking sheet and flatten slightly if desired.
  • Let cookies cool at room temperature for 30–60 minutes or refrigerate until firm.

Notes

Stir constantly while boiling to prevent burning. Boil the mixture for the full time to ensure cookies set properly. Use pure maple syrup for best flavor. Let the mixture cool slightly before adding oats for better texture. Chill cookies for a firmer bite or add extra oats if cookies spread too much.
