Ingredients
  

  • 12 oz sausage (cooked links, Cajun, smoked, or chicken sausage)
  • 1 tbsp olive oil
  • 1 red bell pepper, diced
  • 1 medium zucchini, sliced or diced
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 tsp chili powder (optional)
  • to taste salt and black pepper
  • as needed fresh cilantro, chopped (optional)
  • as needed lemon wedges (optional)

Instructions
 

  • Slice the sausage into bite-sized pieces. Heat olive oil in a large skillet over medium heat. Add the sausage and cook for 5–6 minutes until lightly browned. Remove from the skillet and set aside.
  • In the same skillet, add diced bell peppers and zucchini. Cook for 5–7 minutes, stirring occasionally, until the vegetables are crisp-tender. Add corn kernels and sauté for an additional 2 minutes.
  • Return the sausage to the skillet with the vegetables. Sprinkle in chili powder (if using), and season with salt and black pepper. Stir well to combine and heat through for 2–3 minutes.
  • Plate the skillet mixture in bowls. Garnish with chopped fresh cilantro and a squeeze of lemon if desired. Serve hot with your choice of grains or enjoy as a standalone meal.

Notes

Even cooking: Cut vegetables and sausage into uniform pieces for even cooking. Don’t overcrowd the skillet. Add garlic or smoked paprika for extra flavor. Garnish just before serving. Store leftovers in the fridge for up to 3 days and reheat in a skillet to maintain texture.
