Equipment

  • square baking pan lined with parchment paper
  • mixing bowl
  • saucepan
  • spatula
  • microwave or double boiler for melting chocolate
  • refrigerator for chilling

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 3/4 cup unsalted butter, softened
  • 1 can (397g) sweetened condensed milk
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 200 g milk chocolate
  • 1 cup chocolate candy-coated mini eggs
  • crushed mini eggs (optional)

Instructions

  • Preheat oven to 350°F (175°C) and line a square baking pan with parchment paper.
  • In a bowl, mix flour, sugar, and softened butter until crumbly.
  • Press the mixture evenly into the pan and bake for 18–20 minutes or until lightly golden.
  • Allow the base to cool completely before adding the next layer.
  • In a saucepan over medium heat, combine butter, brown sugar, and condensed milk.
  • Stir continuously until the mixture thickens into a smooth caramel (about 8–10 minutes).
  • Remove from heat, stir in vanilla extract and a pinch of salt.
  • Pour caramel evenly over the cooled shortbread base and let it set slightly.
  • Melt milk chocolate gently using a double boiler or microwave in short intervals.
  • Pour the melted chocolate over the caramel layer and spread evenly.
  • Crush some mini eggs lightly and sprinkle over the chocolate.
  • Decorate with whole mini eggs on top for a festive look.
  • Refrigerate for at least 1–2 hours until fully set.
  • Slice into squares or bars and serve.

Notes

Use softened butter for the best shortbread texture and stir caramel constantly to prevent burning. Chill thoroughly before slicing for clean edges. You can swap milk chocolate for dark or white chocolate, and use dairy-free alternatives if needed. Store in an airtight container or freeze for longer storage.
