Ingredients
  

  • 1 large tomahawk ribeye steak (2–2.5 lbs)
  • 2 tbsp olive oil
  • 1 tsp coarse sea salt
  • 1 tsp freshly ground black pepper
  • 3 tbsp unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp fresh rosemary, finely chopped
  • 1 tsp fresh thyme leaves
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh coriander
  • 1 extra fresh herbs (parsley, rosemary, thyme) for garnish

Instructions
 

  • Remove the steak from the refrigerator 30–40 minutes before cooking. Pat it dry with paper towels, rub it with olive oil, and season both sides generously with coarse sea salt and freshly ground black pepper.
  • Preheat a grill or heavy skillet over high heat until very hot. Place the steak on the hot surface and sear for 3–4 minutes per side until a rich golden crust forms.
  • Reduce the heat to medium and continue cooking for 6–10 minutes, turning occasionally, until the steak reaches your desired level of doneness.
  • In a small bowl, mix the softened butter with minced garlic, parsley, rosemary, thyme, lemon juice, and chopped coriander until well combined.
  • Remove the steak from the heat and let it rest on a cutting board for about 10 minutes. Slice the meat against the grain into thick strips.
  • Arrange the sliced steak on a serving platter. Spoon the herb butter over the warm meat and garnish with extra fresh herbs before serving.

Notes

For best results, bring the steak to room temperature before cooking and pat it dry to ensure a perfect crust. Use a meat thermometer to reach your preferred doneness (130°F–135°F for medium-rare). The herb butter can be prepared ahead of time and refrigerated; allow it to soften slightly before serving so it melts smoothly over the steak.
