Ingredients
  

  • 1 pint fresh blueberries
  • 3 tbsp granulated sugar
  • 1 tbsp fresh lemon juice
  • 1 tsp fresh thyme leaves
  • 8 slices sourdough bread
  • 1 1/2 cups shredded white cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 tbsp unsalted butter, softened
  • flaky sea salt (optional)

Instructions
 

  • In a small saucepan over medium heat, combine the blueberries, sugar, and lemon juice. Stir gently and allow the berries to release their juices. Once the mixture begins to simmer, add the thyme. Reduce heat slightly and cook for about 8–10 minutes, stirring occasionally, until thickened. Remove from heat and let cool slightly.
  • Lay out the sourdough slices. Spread a spoonful of blueberry jam onto one side of four slices. In a bowl, combine the shredded white cheddar and mozzarella. Sprinkle cheese over the jam layer and top with remaining bread slices. Press gently.
  • Spread softened butter evenly on the outside of each sandwich. Heat a skillet over medium-low heat. Cook sandwiches for 3–4 minutes per side, pressing lightly, until golden brown and cheese is melted. Lower heat if browning too quickly.
  • Remove from skillet and sprinkle with flaky sea salt if desired. Let rest for 1–2 minutes before slicing. Serve warm.

Notes

Use medium-low heat to ensure the cheese melts fully without burning the bread. Don’t overfill with jam to avoid soggy sandwiches. Shred your own cheese for better melting. Let the jam cool slightly before assembling. For a lighter option, use whole-grain bread, reduce the butter, or substitute olive oil. You can prepare the jam up to 2 days in advance and store refrigerated.
