Ingredients
  

  • 4 cups cubed watermelon
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, chopped
  • 2 cups arugula or mixed greens
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 2 cups mixed berries
  • 3 tbsp honey or agave
  • 1 tbsp fresh lemon juice
  • 1 cup Greek yogurt
  • 2 oranges, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • 1 lemon, juiced
  • 1 tbsp honey or maple syrup
  • 1 tbsp fresh mint or basil, chopped

Instructions
 

  • Cube the watermelon and place it in a large bowl. Add the arugula or mixed greens. Sprinkle the crumbled feta and chopped mint over the top. Drizzle with lime juice and olive oil. Toss gently to combine and garnish with optional toasted nuts if desired.
  • Wash and pat dry the mixed berries. Combine berries with honey or agave and lemon juice, then let macerate for 10–15 minutes. Layer berries with yogurt in serving glasses. Chill for 15–30 minutes before serving.
  • Peel and segment the oranges and grapefruit. Place segments in a bowl, drizzle with fresh lemon juice and honey, sprinkle with chopped herbs, toss gently, and serve chilled.

Notes

Use ripe, seasonal fruit for maximum flavor. Chill ingredients before assembling for the freshest taste. Swap feta and yogurt with plant-based alternatives for vegan options. Adjust sweeteners based on fruit ripeness. Add nuts or seeds just before serving to maintain crunch.
