Amazing Easter Nest Monoportion Mousse Cakes

Easter is the perfect time to get creative with these individual mousse cakes, featuring a soft cake base, light white chocolate mousse, and delicate chocolate nests with mini candy eggs. Festive, elegant, and easy to make!

Ingredients
  

  • 6 small pistachio or pound cake rounds (~2 inches each)
  • 250 g white chocolate
  • 200 ml heavy cream
  • 150 g cream cheese, softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • as needed yellow glaze (apricot or lemon)
  • as needed dark chocolate, melted (for nest)
  • as needed mini candy eggs
  • optional fruit coulis (lemon or orange) for center

Instructions
 

  • Place the cake rounds in individual serving molds or on a tray lined with parchment paper.
  • Gently melt the white chocolate and allow it to cool slightly.
  • Whip the heavy cream to soft peaks.
  • In a separate bowl, beat the cream cheese with powdered sugar, vanilla, and lemon juice until smooth.
  • Fold the melted white chocolate into the cream cheese mixture.
  • Gently fold in the whipped cream to create a light, airy mousse.
  • Make a small indentation in the center of each cake round and fill with a teaspoon of lemon or orange coulis.
  • Pipe or spoon the mousse over each cake round, smoothing the top with a spatula. Chill in the refrigerator for 2–3 hours until set.
  • Brush or pour the yellow glaze over each mousse cake for a glossy finish.
  • Melt dark chocolate and pipe small nest shapes on top of each cake.
  • Place mini candy eggs inside the chocolate nests for decoration.
  • Keep the cakes chilled until ready to serve.

Notes

Whip cream to soft peaks to keep mousse airy. Fold ingredients gently. Chill 2–3 hours before glazing. Use quality chocolate for best flavor. Optional fruit coulis adds a refreshing twist.
