Amazing Classic Pancakes with Eggs & Crispy Beef Bacon

Ingredients
  

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk (dairy or plant-based)
  • 1 large egg
  • 1 tbsp melted butter or plant-based butter
  • 1/2 tsp vanilla extract
  • 4 slices beef bacon
  • 2 large eggs
  • 1 tbsp butter for cooking eggs
  • 2 tbsp maple syrup
  • 1 pinch paprika or chili flakes
  • 1 tsp oil or butter for frying pancakes

Instructions
 

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, combine the milk, egg, melted butter, and vanilla extract until smooth. Pour the wet ingredients into the dry ingredients and mix gently until combined, leaving a few small lumps in the batter.
  • Heat a lightly greased skillet over medium heat. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2–3 minutes until bubbles form on the surface, then flip and cook another 1–2 minutes until golden brown. Keep cooked pancakes warm while preparing the rest.
  • In another skillet over medium heat, cook the beef bacon slices for about 3–4 minutes per side until crispy. Transfer the cooked bacon to paper towels to drain excess fat.
  • In the same pan, melt the butter and crack in the eggs. Cook sunny-side-up until the whites are set and the yolks remain runny. Sprinkle lightly with paprika or chili flakes for flavor.
  • Stack the pancakes on a plate, add butter and drizzle with maple syrup. Arrange the crispy beef bacon and sunny-side-up eggs alongside the pancakes. Serve immediately while warm.

Notes

Do not overmix the pancake batter to keep the pancakes soft and fluffy. Cook pancakes over medium heat for even browning. Keep finished pancakes warm in a low oven while preparing the eggs and bacon. For variations, add blueberries or cinnamon to the batter, or sprinkle chopped nuts over the finished pancakes.
