Ingredients
  

  • 6 medium apples, peeled, cored, and thinly sliced
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 tbsp butter, cut into small cubes
  • 1 double pie crust (top and bottom)
  • 1 egg, beaten (for egg wash)
  • 1 tbsp coarse sparkling sugar
  • 4 scoops vanilla bean ice cream

Instructions
 

  • Preheat the oven to 375°F (190°C). Line a 9-inch pie dish with the bottom crust, gently pressing it into the edges.
  • In a large bowl, combine sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Toss until the apples are evenly coated.
  • Pour the apple mixture into the prepared crust and spread evenly. Dot with cubes of butter. Place the top crust over the apples, trim excess dough, crimp the edges to seal, and cut small slits in the top for steam.
  • Brush the top crust with the beaten egg and sprinkle coarse sugar over the top for extra texture and sweetness.
  • Bake for 45–50 minutes until the crust is golden brown and the apple filling is bubbling. If the edges brown too quickly, cover them with foil.
  • Allow the pie to cool for 10–15 minutes before slicing. Serve warm with a scoop of vanilla bean ice cream.

Notes

Use a mix of tart and sweet apples such as Granny Smith and Honeycrisp for the best flavor. Keep the pie dough chilled to help create a flaky crust. If the edges brown too quickly during baking, cover them with foil. Allow the pie to rest briefly before slicing so the filling can set properly.
